Paso Robles Wine Club Food and Wine Pairing: Rotta ~ 2015 Cabernet Franc

It is difficult to find where to start talking about this winery. One of the oldest in the Paso Robles and the first to be awarded Robert Parker points for their xx wine inx. Its much harder not to mention their eclectic winemaker Christian Tietje a man who can accomplish everything. Led by on passion for life, Christian is a surfer, punk rocker, metal artist, and winemaker. He also makes big, bad-ass red wines for Cypher Winery in Paso Robles California. His wines have a cult like following of their own with outrageous art labels and names like Anarchy, Peasant and Heretic better known as "The Freaks. “This Rotta project was for him an opportunity to." let the creative juices flow. “He has worked the old vineyards into a new sophisticated direction while respecting its fascinating past.

Tasting notes: Earthy, fruity and aromatic Cabernet Franc with bright berry notes of plum and peppercorn. There are hints of violets and toasty oak influences. A full vulmptus body skillfully balanced with bold, youthful tannin ending in a long lingering. A wine set to mature into elegance given a bit of time.

Pair it with Indian butter chicken without fear of spice! This wine will have the right mix of acidity and body to match the flavor of the dish.
