In Paso Robles Wine Country, we enjoy beautiful weather all year long and even on the chilliest of winter days, we can go wine tasting at over 200 wineries along California’s Central Coast. One of the benefits of our temperate—and envious climate—is that we can enjoy the bounty of local foods that pair perfectly with wines from Paso Robles. We may not brave snow and ice the way some of our friends do, but we like to cozy up around the fire and enjoy a hearty winter meal.

Pairing wine with food is a practiced skill, but in general, it’s about bringing out the nuanced flavors of a dish by pairing it with a complimentary wine.

Here are some of our favorite winter dishes and our recommendations for wines that pair well:

French Onion Soup: If done right, it’s hard to call this classic French staple a soup—it’s more a heavenly feast of caramelized onions, bread and cheese. The French have it right when they pair it with a simple vin blanc, so we recommend the same; try a Central Coast Chardonnay.

Cioppino: Tomatoes, saffron and plenty of garlic characterize this beautiful and hearty seafood stew. For a lovely compliment, pair the dish with a rosé.

Beef Stew: Fancier names exist for this classic dish, but no matter the name, this stick-to-your ribs stew chockfull of meat, earthy root vegetables and winter herbs begs to be paired with a hearty Cabernet Sauvignon.
