Yes, I love our wine region! There is so much going on. As these wines are shipped Sept. 8th there is a Brand New 4 Star Resort Opening. The Ayres Allegretto Resort will offer valet parking and be a valued location for conferences and leisurely spa stays. It is opening just in time for Harvest Season and will include a fantastic Restaurant and Bar along with a beautiful courtyard to lounge in on the lovely fall evenings here in Paso.

Ok ~ enough about leisurely repast: To the wines included in this shipment. We are loving the large and small and even super small producers here in Paso. Diablo Paso & Last Light are real micro production companies. Brady & Falcone are small producers who have been in the business for a long period of time. Of course, Hearst Ranch and Niner Wine Estates boast billionaires as owners and obviously are the largess associated with wine regions around the world. We love when the big guys are able to post nice vintages for us to enjoy because so often customers on our wine tours just want to bypass them for the more personal experiences of the small guys. We like to stop in and see what the bigger guys are doing once in awhile and find lovely wines as we have here. All of the wines are great and as always, we hope you enjoy them as much as we do.

The Art of making a memorable toast!

Life’s special moments are meant to be celebrated and shared. If you’re asked to make a toast, a few simple tips can help you make one that’s memorable.

Here are 3 tips for making a memorable toast:

Keep it short: Before you start working on what you’re going to say, the first thing to remember is brevity. Keep your sentiments short. It’s easier for people to pay attention and your words will be more memorable.

Have someone introduce you: It’s hard to get the group’s attention, especially during a festive event. Research shows that when someone else introduces you, the group is more likely to give you the floor, pay attention, and see you as an authority. Your introduction need not be grand, just a short, “Here’s ______ with a few special words."

Tell a story: We all come from a long line of storytellers, so it’s no wonder that we’re hardwired to prefer short narratives. Whether you’re telling a story about the bride or the groom—or both—remember that the best anecdotes entertain and make a point, but don’t embarrass.

Diablo Paso
Born out of our love and delicious food, [Enrique and Nora Torres] have became the premier Spanish varietal wine producers in Paso Robles CA. Enrique and Nora first met in small fishing village in Mexico, when  Nora came from the U.S. to study Spanish and travel. They reconnected after Enrique came to the U.S. in 2001 and discovered a passion for wine after working as a cellar rat at Martin & Weyrich winery. Married in 2003 and now with two children, The Torres are focusing on growing their Diablo Paso Boutique Wine label. Enrique worked for three years crushing, sorting, grapes, performing pump overs, punch downs, barrel topping, racking tanks, filtering and bottling wine. He was promoted to became the Cellar Master and after two more years became the Assistant Winemaker. During this time, he learned various winemaking techniques under the head Winemaker Alan Kinne, the godfather of Tempranillo and Albarino in the U.S. Enrique and Nora decide to produce their own boutique label after many years of hard work, planning and supporting each other.  Their focus is in Spanish Varietals, including Garnacha, Tempranillo, and Albarino because of Enrique's heritage and love of the wines from this region. We are dedicated to offering our customers only the finest wines.

Simple Peach Salad ~ Pairs with Hearst Ranch: Three Sisters Cuvee


INGREDIENTS AND DIRECTIONS:
Sometimes it is as easy as this:
Throw together some arugula, fresh peaches, chopped red onion, cucumber, fresh creamy goat cheese and sliced almonds for some crunch, and pair with a the Three Sisters Cuvee. The Viognier, Roussanne and Grenache Blanc blend nicely with the plate as deliciously sweet and zesty summer lunch or dinner salad.

EASY PAELLA ~ Pairs with Diablo Paso: Garnacha

INGREDIENTS
  • 2 tablespoons olive oil
  • 3/4 pound medium shrimp, peeled and deveined
  • 1 (12 ounces) chicken sausage, sliced in 1/2-inch rounds
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups long-grain rice
  • 1/4 teaspoon paprika
  • 1/4 teaspoon ground turmeric
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cans (14.5 ounces each) reduced-sodium chicken broth
  • Coarse salt and ground pepper
  • 1 cup frozen green peas, thawed

DIRECTIONS
  1. In a heavy 12-inch saute pan, heat 1 tablespoon oil over medium-high heat. Cook shrimp until just pink on both sides, 4 to 5 minutes (do not overcook). Transfer to a plate.
  2. Add remaining tablespoon oil and sausage to pan; cook over medium-high heat until beginning to brown, about 2 minutes. Add onion, and cook, stirring frequently, until translucent, 3 to 4 minutes. Add garlic and rice; cook, stirring to coat, until rice is translucent, 1 to 2 minutes.
  3. Stir in paprika, turmeric, tomatoes, and broth, scraping up browned bits from bottom of pan with a wooden spoon. Season with salt and pepper.
  4. Bring to a boil, then reduce heat to a simmer. Cover, and cook until rice is tender and has absorbed almost all liquid, 20 to 25 minutes. Stir in peas; cook 1 minute. Stir in cooked shrimp; serve immediately.
